Our sadness at Thornton’s closing has been alleviated somewhat by its second-floor dining-room being taken over by Andy McFadden, a Tallaght native who went to London seeking his fortune and ended up with a Michelin star at the tender age of 24. From the Suckling Pig with Turnip, Chorizo & Tarragon to the John Dory with Grapefruit, Quinoa & Brassicas – in case you’re wondering, it’s a member of the mustard family – everything is perfectly executed. Whilst taking his food very seriously, McFadden also likes to have fun with his nibblesome Knockanore Cheddar Dumplings inspired by a cracking cheese toastie he had nearby in Grogan’s bar!
