Food Champion: Judith Boyle of Boyle's Pub and Two Sisters Brewing, Co. Kildare
In Hot Press’ special Best of Ireland 2018 magazine, we celebrated the Irish Food Revolution – and spoke to some of Ireland's leading Food Champions about the part they have played in making Ireland one of the hottest food destinations in the world.
I’m a fifth-generation publican – I work in our family bar and off-licence in Kildare Town. With my sister Susan, I also produce a beer called Brigid’s Ale as part of Two Sisters Brewing. My obsession is telling local people and tourists how special the Irish drinks industry is, and how it adds to the experience when people come here to visit.
My focus at the moment is promoting local drinks producers. I run a tour with my sister Susan, and we tell the stories of drinks producers in our pub in Kildare as well. We want tourists to realise that each town and area will have a local brewer and local distillery. I’m a qualified beer sommelier, so I really do believe there is potential in matching craft brews with lovely Irish food.
For example, if you get a nice IPA and match it with some Irish goat’s cheese, they really complement each other. There are wonderful ways to match Irish drinks with Irish cuisine, and I want people to discover them.
