That not all red onion marmalades are created the same is evidenced by the one made by Shannon Forrest and Declan Malone, a Michelin Star trained chef who wanted something special to slather over the toasties and sandwiches in their Tipperary food truck.
There’s a comforting warmth to their coarse cut creation, which is also the perfect accompaniment to homemade burgers, blue cheese and charcuterie. Rívesci launched in September 2019 at Clonmel Applefest, offering cooked from scratch food from their 1976 vintage caravan.
During the pandemic, Rívesci closed their food truck and pivoted their business to become full time condiment makers. Cashew Chilli Crush and Red Onion Marmalade with Spiced Port are now available at a stockist near you.
