This restaurant and cookery school, run by Ailish and Enda Hennessy, is in a charming converted farmhouse in the countryside outside Roscrea. The dishes are traditional, with hearty portions of poultry, lamb and seafood to the fore, with a couple of vegetarian options for good measure. The recipes for Hennessy’s awesome Beef Goulash and Beef & Guinness Casserole can both be found on their website.

Best Dish: Tian of Crab, Avocado & Duncannon Smoked Salmon – as part of the €54 Dinner Menu
