Denis Cotter is an evangelical vegetarian chef who’s tempted even the most committed meat-eater to forgo their usual staples and take a walk on the wild side. There are also two spacious guestrooms if you decide you want to stay. They do amazing things with local produce combined with cheese, chocolate and chili, alongside the obligatory pulses and seeds. 

Best Dish: King Oyster Mushrooms and Yellow Chanterelles with Grilled Leek, Pumpkin Gnocchi, Lemon Thyme Butter, Salted Walnuts & Aged Coolea – as part of the €40 Three-Course Menu
