The name of the restaurant comes from the Sooty Olive fly that was used by the owner of the restaurant to catch the largest wild trout in Donegal. Head chef Sean Harrigan extends the fish-related theme to his cooking with both lunch and dinner featuring knockout seafood dishes alongside excellent beef steaks.
