Craft Beer & Distilling Feature: Ballykilcavan Brewing
The Hot Press guide to the best beers, spirits, bars and artisanal foods.
Based at Ballykilcavan farm, in an area which has been owned by the Walsh family for 13 generations, the Ballykilcavan Brewery was born out of the family’s passion for brewing and a deep knowledge of how to source and grow the finest ingredients for their beers.
Owner David Walsh had been homebrewing since 2007, until last year, when he and his wife Lisa started production in the 230 year old stone grain store which is located in their family farm.
To celebrate the occasion, David and Lisa are also set to begin tours of the brewery this summer. Visitors will get a chance to explore the old farmyard, before heading into the brewery to taste the raw ingredients, see how the beers are made and sample the final product.
As well as the regular tours, David is also planning a series of events over the summer, the highlight of which will be a long table supper for 120 people in the courtyard at Ballykilcavan on Midsummer’s Day, June 21. This will be an exquisite event and will mark a real local success story. Find all the details on their website!
